Braised Chicken Gizzards in Soy Sauce
- 
Clean gizzards. 
 Boil in cold water with green onion, ginger, peppercorns, and cooking wine for 5 min.
 Drain and rinse.

Add to pot: 
 Gizzards, green onion, ginger, star anise, cinnamon, bay leaf, dried chilies, rock sugar.
 Season with:
 1 tbsp soybean paste, 3 tbsp soy sauce,
 1 tbsp oyster sauce, 2 tbsp dark soy sauce.
- 
Pour hot water to cover. 
 Boil for 2 mins on high heat.
 Simmer on low for 30 mins. Stir twice.
 Reduce sauce. Done!
